FORWARD-LOOKING HISTORY

Planning, interpretation and terroir: these are the foundations of Cesarini Sforza’s production philosophy. History is projected into the future and tradition is lead by innovation.

Among the pioneers of Trentino sparkling wines, our winery has been interpreting the uniqueness of Trentodoc for more than 50 years. Cesarini Sforza’s sparkling wines tell the story of the excellence of a territory with an innate wine vocation, they are faithful to our history and to our desire to create our own unmistakable style in the panorama of Classic Method bubbles. We strongly believe in the union between the tradition and experience that have brought us this far and the pioneering vision that guides us every day: 50 years have written our past, but also laid the foundations for the future of a solid and forward-looking company.

 

INNOVATION AND SUSTAINABILITY IN THE NAME OF TRADITION

The winery is completely set underground and air-conditioned, with a constant temperature of 12-14°C all year round.

Since 2019, a phase of major investments in the production structure has started: the winery has been enriched by a technological upgrading with avant-garde machinery and equipment in order to ensure the maximum consistency and quality of all our products.

In 2021, the disgorging line was completely renovated, with the purchase of the latest generation of machines to guarantee a perfect dégorgement.

In 2024, a photovoltaic system was installed, a symbol of our focus on energy efficiency and environmental sustainability, which will allow us to cut consumption by promoting energy self-sufficiency.

 

CERTIFICATIONS

BRC

The BRC Global Standard for Food Safety was established in 1998 to ensure that branded products are produced according to well-defined quality standards and in compliance with minimum requirements.
It is one of the food safety-related standards recognized by the Global Food Safety Initiative (GFSI), an international initiative whose main purpose is to strengthen and promote food safety throughout the supply chain.
Application of the BRC is therefore a necessary prerequisite for being able to export one’s products, and is a recognized assurance tool about corporate reliability.
The standard was developed by:

British Retail Consortium, which represents major British retailers such as Tesco Stores, Sainsbury’s Supermarket, ASDA Stores, etc.
UKAS (United Kingdom Accreditation Service), the UK national accreditation body, and recognized by it.
The standard applies to food processing and preparation companies and identifies the specific elements of a management system focused on the quality and sanitary safety of products, which takes the HACCP methodology as a reference for planning and implementation.

The main elements are:
adoption of good reference practices;
adoption of an HACCP system (hygiene self-monitoring system);
adoption of a documented quality management system;
control of standards for work environment, product, process and personnel;

existence of appropriate specifications for:
raw materials (including packaging materials),
finished product, intermediate/semi-finished products (where required),
monitoring of suppliers,
site placement,
the accumulation, collection and disposal of waste material,
hygiene and organization standards for personnel,
process control.

IFS
The International Food Standard (IFS) aims to facilitate the effective selection of retail branded food suppliers based on their ability to provide safe products that meet contractual specifications and legal requirements.
It constitutes a recognized model both in Europe and the rest of the world.
It is one of the food safety-related standards recognized by the Global Food Safety Initiative (GFSI), an international initiative whose main purpose is to strengthen and promote food safety throughout the supply chain.
The IFS Food standard is the result of the cooperation of:

HDE and FCD, representations of German and French retailers, respectively,
Federdistribuzione, a body that organizes and represents Italian large-scale retailers,
ANCC (National Association of Consumer Cooperatives)
ANCD (National Association of Cooperatives among Retailers).
It applies to food companies that supply retailer-branded food products.
The standard identifies the specific elements of a management system focused on product quality and sanitation safety, which takes the HACCP methodology as a reference for planning and implementation.

The main elements are:

control of standards for work environment, product, process and personnel
existence of appropriate specifications for:

ORGANIC PRODUCT CERTIFICATION

For its own viticultural production, as well as the production and commercial process, since 2010 the company has obtained, through the required, periodic controls, compliance with the provisions of EC Reg. 834/2007.
